Mini Meatloaves


I thought I would try something different with meatloaf. It was a great change from the same ol' thing!!

1/4 cup each of green, yellow, orange and yellow bell peppers, diced
1/2 cup onion, diced
1/2 cup panko bread crumbs
1 egg
1 teaspoon Italian seasoning
1 teaspoon dried parsley
1/2 teaspoon sea salt with garlic
pepper to taste
shredded mozzarella & provolone cheese mix
1 1/2 lbs lean ground beef
bacon (I used turkey bacon)

Mix all ingredients together except for the cheese.

Separate into fourths and pat out into a rectangle patty. Top with some of the cheese.

Roll patty and wrap 2 pieces of bacon around the roll.

Place on a broiler pan and cook at 350 degrees for around 30 - 40 minutes. Top with extra cheese.

Enjoy!!

Those do look pretty good! Now I know what I can do with my turkey burger. (If anyone else in my family would eat it that is!)
